The description

Originally produced for the restaurants of Genoa and Liguria, Gavi is Piedmont’s most important dry white wine.

The very ripe grapes are harvested by hand and 80 percent traditionally fermented off the skins at a controlled temperature in small stainless steel vats. Following alcoholic and malolactic fermentation, the wine sojourns on the yeasts.

The rest of the fruit is allowed to over-ripen slightly then vinified in new barriques of French oak, where it is left to mature until February of the following year.
